Avocados can be used as substitute for meats in sandwiches and salads because of its high fat content(mostly monounsaturated fat). Some studies have also shown that it helps to lower blood cholesterol levels. Few weeks ago I had found out a recipe for making avocado soup somewhere while surfing the net. This refreshing avocado soup helps to beat this summer heat a bit and of course its healthy too. It’s really simple and requires no cooking at all because we basically mix everything in a blender until smooth. the ingredients required for this soup can be easily bought anywhere in the grocery stores.
2 green onions
1/4 cup of fresh mint
1/2 cup yogurt
1 1/2 cups of water
Since this soup requires no cooking, basically we are just going to mix all the ingredients in the blender. But before blending them, first we need to chop them.
We can start with the cucumber by dicing 1/3 of the cucumber and chopping into chunks the rest of it. These chunks are going to be put in the blender and we’re going to use the diced one to garnish our soup.Unlike the cucumber the other ingredients (mint, onion and avocado) just needs to be chopped. We just need to chop them a bit, that will be enough. After finishing chopping all the ingredients, now we need to put them in the blender.
Now the next step would be adding the water and yogurt. First measure 1/2 cup of yogurt and 1 1/2 cups of cold water and pour into the blender and start mixing all the ingredients. At the beginning, put the blender on low-speed and later increase its speed. We need to make sure that everything gets totally chopped up and then made absolutely smooth. This might take up to 2-3 minutes.
Now the soup is ready and don’t forget to garnish it with the diced cucumbers just before serving. We can have it right away or we can also chill it in the fridge for up to 3 hours before serving. This soup has a very beautiful color along with its many health benefits.
